If you were to ask me, point blank, to name one thing I love, odds are fairly high that “cheese” would be the first thing that comes to mind.  I legitimately don’t think I’ve gone more than a day or two without eating cheese.

Another thing I love? Chipotle. It’s one of those fast food restaurants I like to go to when I don’t want to feel guilty about what I’m eating. This is, of course, despite the fact that I’m still putting two pounds of shredded cheese, sour cream, and guac on that burrito bowl. It’s good stuff.

That’s why the cheese lover in me is pretty excited to learn that Chipotle is starting to roll out queso in over 350 stores across California and Denver next week. Why does that excite me? Because if it tests well in those markets (and I have no reason to assume that it won’t, because cheese is the nectar of the gods), it could go nationwide as early as September. Queso is apparently one of the most requested items that’s currently not on the Chipotle menu.

So get ready and cross your fingers, fellow cheesaholics. The Rochester Chipotles could be getting a lot tastier in the very near future. It puts a little tarnish on Chipotle being a guilt-free fast food restaurant, but that’s a sacrifice I’m willing to accept.
