From Food Truck to Food Lab: Rochester’s Newest Restaurant Is Ready To Open
Taco Lab is one of my favorite food trucks in Rochester, Minnesota. I'm not a hardcore foodie, but I really appreciate their unique and imaginative menu items like the Kung Fu Chicken which is served in fried wonton and topped with corn pico. Their menu is constantly evolving but includes delicious staples like street tacos and elote.
The food truck, where Mexican cuisine gets a creative twist, has enjoyed such tremendous success that it's expanding into a permanent establishment known as "Food Lab."
Rochester's newest restaurant, located on 7th St NW, will be serving more than Mexican food. Food Lab will offer breakfast, lunch, and dinner and the menu is full of creativity.

Food Lab is Rochester's Newest Restaurant
Food Lab's breakfast menu includes indulgent items such as Creme Brulee French Toast and Oreo Pancakes, as well as hearty options like biscuits and gravy and breakfast burritos.
Lunch options include street tacos, taco bowls, soups, salads, and sandwiches. The dinner menu includes elegant entrees like Pistachio Salmon, Bourbon Chicken Marsala, Spicy Scallop Fettucine, and Filet Mignon Tacos.
When Is Food Lab Opening in Rochester?
Food Lab told me they're opening with limited hours this weekend.
We will be opening for dinner only from October 6 to October 9, then regular hours. Menu includes original creations using locally-sources items where available, and also a small menu of adult drinks to compliment our unique food.
