Don't Use Too Much Lighter Fluid

A great way to ensure your charcoal burns, is to put some newspaper underneath the charcoal to get it started. If you DO have to use a bunch of lighter fluid, let it burn for about a half hour to burn off the excess fluid. Otherwise, you might be able to taste the lighter fluid in your food.

Don't Cook Too Many Things at Once

A lot of times, if you cook a few types of meat at the same time, the flavors will transfer. You don't want a chicken tasting like steak. But then again, would that be a bad idea? Also, by doing this, you don't leave much room on the grill to move stuff around to a cooler side if it happens to be cooking too fast.

If You're Grilling Steak, Make Sure the Grill is HOT

You want to make sure when you're grilling a steak that you DO NOT slow cook it with the lid down. If you do that, it's basically like steaming it and it will dry out. Get a nice hot fire going so you sear the outside of the steak.

Keep Your Steaks Off Direct Heat

Once you've seared the outside of the steak, move it to the edge of the grill so it doesn't get burnt. There's nothing worse than a crispy, burnt steak.

***Tip 4.1 Don't grill a cold steak. Make sure your steak is at room temperature before throwing it on the grill.

Don't Move The Meat Around Too Much

It's best to let it sit for a few minutes and for the love of the grill Gods, do NOT push the meat down into the grill with your spatula or tongs. That releases all the juices in your food.
